Noodle Salad With Spicy Sauce

Glass noodle salad with spicy peanut sauce
Glass noodles are not boiled, but soaked in hot water. They got their name because they are almost transparent after soaking. They can be prepared particularly quickly and go well as an accompaniment to numerous dishes from Asian cuisine. In our recipe, they are combined with a peanut sauce.


Ingredients (for 4 servings):

  • plain white plate
  • 50g cashew nuts
  • 50g baby spinach
  • ½ cucumber
  • 1 carrot
  • Salt, sugar

Peanut sauce:

  • 8 tbsp sunflower oil
  • 4 tbsp sesame oil
  • 6 tbsp apple cider vinegar
  • 4 tbsp sweet chili sauce
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 2 tsp chili grind

Preparation:

Roast cashew nuts in a hot pan with 1 pinch of salt and sugar each. Remove and set aside. Pour boiling, lightly salted water over glass noodles in a bowl and cover and let stand for 10 minutes. Drain and set aside. In the meantime, wash the baby spinach and spin dry. Clean and peel the cucumber and carrot. Use a peeler to slice both into thin strips. Put all ingredients for the peanut sauce in a bowl and stir with a whisk. Mix the glass noodles, cucumber and carrot strips and baby spinach in a large bowl. Arrange the salad in bowls and pour the peanut sauce over them. Sprinkle cashew nuts on top and serve.
